Looking for a festive way to serve lunch to your children or even to yourself?! Try the muffin tin lunch! It’s the perfect way to get a variety of healthful foods onto your plate, or muffin tin, and it’s a fun new way to eat the foods you love. (Unfortunately, I can't find the above pumpkin tin anymore in stores, but I found another one {pictured below} that would be perfect … [Read more...]

Eggplant Parmesan Recipe

October 16, 2010 by Erin, The $5 Dinner Mom 4 Comments

Eggplants.  The purple gems of the garden. Also known as a tasty treat for pesky chipmunks.  I saw 3 eggplants fruit in my garden in the last month and a half or so. And every one of them ended up as a meal for my little critter friends. Enemies, really. It helps knowing that they didn't get to enjoy the eggplants like we get to enjoy eggplants.  They have to eat them … [Read more...]

Smothered Pork Chops Recipe

October 15, 2010 by Erin, The $5 Dinner Mom 12 Comments

Smothered Pork Chops. Oh yes. We'll be making you again!!! And as you can see, we have yet again another sorta vague recipe. It leaves me wondering...How many chops?! Based on the fact that I doubled the celery and onion it called for and that was plenty for the 9 chops I had...I'm going with 4 chops for the original recipe. Place the flour with a little salt and … [Read more...]

Ship Wreck Casserole – Vintage Recipe

October 13, 2010 by Erin, The $5 Dinner Mom 60 Comments

Ship Wreck Casserole! A delicious vintage recipe from the 1960's! It's Vintage Recipe Week.  And all I can think about is my Grammy in the kitchen.  I have many a memory of her working hard in the kitchen...working to feeding her brood. As I made this Ship Wreck Casserole, I could only think about her in 1940.  She would have been a teenager, and it would … [Read more...]

Pumpkin Chocolate Chip Cookies

October 13, 2010 by Erin, The $5 Dinner Mom 34 Comments

UPDATED! I saw a few comments asking about the baking soda in the recipe...I have remade these a number of times in the past few weeks...with 1 tsp, 2 tsp and 1 Tbsp...I found that the 2 tsp is the best option...so I updated the recipe. The pumpkin makes the cookies very dense, so there needs to be additional rising agent. Thanks for helping me get this recipe … [Read more...]

Roasted Sweet Acorn Squash + Dish Saving Trick

October 12, 2010 by Erin, The $5 Dinner Mom 5 Comments

Amazing recipe for Roasted Sweet Acorn Squash, and a simple trick to save you a few dishes to wash! So here's a trick that I accidentally happened to do the other night...and I'll never do it the old way again!  Mainly because it saves you the trouble of dirtying and washing a serving dish. (Well, unless I was serving this to guests...then I would put it into a … [Read more...]

Chicken Croquettes

October 11, 2010 by Erin, The $5 Dinner Mom 15 Comments

I chose this recipe for the Vintage Recipe Week because it seemed simple, and it seemed like I'd be able to get it in under $5. But when I took a closer look at the recipe when I started on dinner, I came across two little problems. 1. I had no bread crumbs. 2. I had no white sauce. But never fear...I know how to make both. It'll just add a few minutes to the prep … [Read more...]

Good Monday afternoon friends!  You all are in for a treat this fine Monday.  You're getting a double bonus on recipes today! This one, plus another tonight for the $5 Dinner Challenge! I was working on dinner over the weekend when Steve pops into the kitchen with a few handfuls of itty bitty tomatoes. Huh? I thought the garden was "done."  I haven't officially closed … [Read more...]

Chorizo Black Bean Soup

October 8, 2010 by Erin, The $5 Dinner Mom 16 Comments

So as I start this one out, I'm going to preface it with...this is not going to be a $5 Dinner.  Why not?! Let's just say that the pound of chorizo sausage alone cost almost $5.  It's an all natural, homemade chorizo sausage that I got earlier this summer at the farmer's market.  It's been waiting in the freezer...for this recipe! Here's the deal. Here's … [Read more...]
