Recipe: Instant Pot Pumpkin Spice Steel Cut Oatmeal

Instant Pot Pumpkin Spice Oatmeal

Make this delicious pumpkin spice oatmeal recipe in your Instant Pot. Recipe includes options for using 3 different varieties of oats. Enjoy!

Servings - 4 servings

Ingredients 

  • 1 cup steel cut oats, quick cook steel oats, or rolled oats
  • 2 cups warm water - rolled oats
  • 2 1/2 cups warm water - quick cook steel oats
  • 3 cups warm water - steel cut oats
  • 3 Tbsp brown sugar
  • 1/4 cup canned pumpkin puree
  • 1 tsp pumpkin pie spice
  • Pinch of salt

Instructions

  • Remove insert from the Instant Pot. Place oats, water, brown sugar, pumpkin puree, pumpkin pie spice and a pinch of salt into the insert. Give it a gentle swirl to combine. Place the insert into the instant pot. Put the lid on and set to Sealing.
  • Steel Cut Oats - Manual, High, Adjust to 7 minutes.
  • Quick Cook Steel Cut Oats - Manual, High, Adjust to 4 minutes.
  • Rolled Oats - Manual, High, Adjust to 4 minutes.
  • Quick release, and then open up the Instant Pot and remove insert immediately.
  • The oatmeal and any remaining liquid will thicken as it cools. Ladle the oatmeal into bowls and top with nuts or pecans, and swirl in any milk or more sweetener to taste.

Slow Cooker Egg Casserole with Sausage and Red Pepper

Cook this overnight for breakfast, or start it after lunch for dinner. Enjoy!

Cook Time4 hours hours
Servings - 4 servings

Ingredients 

  • 1 lb. ground Italian sausage
  • 4 slices bread, torn into pieces
  • 1 small red bell pepper seeded and diced
  • 1/4 cup red onion chopped
  • 12 eggs
  • 1 cup milk
  • Salt and pepper, to taste

Instructions

  • In a medium skillet, brown the sausage. Drain and set on paper towels until ready.
  • Spray the bottom of your slow cooker with non-stick cooking spray. Add bread pieces, diced red pepper, chopped red onion and browned sausage to the base of the slow cooker.
  • In a medium bowl, whisk the eggs with the milk and season with salt and pepper.
  • Pour the egg mixture over the bread and sausage in the slow cooker. Set on high and cook for four hours.
