Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

I’m in mourning today. My oldest son is now 8. And I’m desperately searching for a “pause” button. I’d even take a rewind button…and go back to the toddler phase (the good, the bad and the really ugly!)…because I love my littles. And I don’t want them to get a minute older.

But alas, such is life…and it’s a joy watching them grow and mature. Now, enough with the sappiness and onto this week’s meal plan…

Grilled Citrus Tilapia Packets

1 cup brown rice
4 tilapia fillets, about 1 1/4 lb. total
1/2 tsp ginger
1 lemon
1 orange
Serve with 12 oz. steamfresh green beans

Grilled Marinara Chicken

1 package chicken thighs
Fresh basil, oregano, thyme
1 jar favorite marinara or spaghetti sauce
1 box whole wheat rotini pasta
Parmesan cheese
2 large broccoli heads, cut into florets

Roasted Red Potato Salad

13 small red potatoes
3 sprigs of rosemary
Drizzles of olive oil
1/2 cup mayonnaise
1/2 cup milk
1-2 Tbsp Dijon mustard

Sour Cream Chicken Enchiladas

1 16 oz container fat free sour cream
1 can of green chiles
1-2 cups homemade chicken stock
about 1 1/2 cups of shredded chicken
1/2 tsp garlic powder
10 flour tortillas
1-2 cups shredded cheese
2 cups of frozen corn

Eggplant Pizza Bites

3  8-10 inch fingerling eggplants, cut into 1/2 inch thick slices
2 tablespoons olive oil
1 cup pizza sauce or leftover spaghetti sauce
1/2 cup shredded mozzarella
garlic powder

Seven Layer Tostadas

8 tostada shells
1 can refried beans (or 2 cups homemade refried beans)
1 chicken breast, shredded, or about 2 cups
2 avocados
1/2 tsp ground cumin
2 Tbsp lime or lemon juice
Chopped peppers
Canned, or cooked black beans, about 1 cup
About 1/2 cup salsa
8 pinchfuls of shredded cheese
