The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Hope you’re ready to grill this week, as we’ve got 2 delicious grilled chicken recipes on the menu this week. Along with one of my favorite pancake recipes and a strawberry sorbet that is to.die.for.  Mix up a big batch (double, triple, quadruple!) when you see strawberries on sale…as June is always the month with the best berry prices!  (See more Berry Recipes on our Pinterest Board)

Chicken Potato Stirfry on the Grill

2 chicken breasts, about 1 lb
2 Tbsp olive oil
2 tsp red wine vinegar
2 Tbsp garlic and onion grill seasoning
4 medium Idaho potatoes
1 green pepper
1 onion
Serve with watermelon or other fresh fruit

Sweet ‘n Sour Beef ‘n Cabbage Tacos

1 lb. ground beef
1/4 small cabbage (see how to easily shred cabbage here)
1 15 oz. can tomato sauce
1/4 cup brown sugar
1/4 cup cider vinegar
4-5 green onions
8 flour tortillas
Side – fresh fruit or veggies

Vegetarian Enchilada Stuffed Zucchini

4 medium zucchinis
1 cup cooked rice (bake rice in the oven!)
1/2 cup cooked black beans (how to cook dry beans)
1/2 cup corn
1/2 cup tomato
1/4 cup onion
1/4 cup bell pepper
1 teaspoon taco seasoning (homemade taco seasoning mix)
1 cup enchilada sauce (homemade enchilada sauce recipe)
1 cup cheese

Cheesesteak Sloppy Joes

1 lb. ground chuck
1 green pepper
1 15 oz. can tomato sauce
2 tsp minced onion
1 tsp minced garlic
1 tsp vinegar
1 Tbsp prepared mustard
1 Tbsp brown sugar
4 whole wheat buns
4 slices provolone cheese
Serve with fresh fruit and chips

Grilled Hawaiian Chicken Sandwiches

2 large chicken breasts
BBQ sauce for marinade, about 1/2 cup
1 can pineapple slices
4 whole wheat buns
BBQ, ketchup. honey mustard for sandwich
Side of fresh fruit or veggies and/or chips

Whole Wheat Carrot Cake Pancakes

2 cups whole wheat flour
1 teaspoon cinnamon
2 teaspoons baking powder
1 1/2 – 1 3/4 cups milk
1 egg
1/4 cup applesauce
2 Tablespoons maple syrup
2 Tablespoons butter
1 1/4 cup grated carrots
Homemade Syrup: equal parts cream cheese and maple syrup with dash of cinnamon
Serve with breakfast meat, eggs, fresh fruit

Strawberry Sorbet

2 pounds strawberries (use this tip when berries are on sale)
1 cup sugar
1/2 cup water
~ 2 cups rock salt
~ 5 pounds ice
