The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

A full week at home…I cannot wait. Don’t get me wrong, I love what I do and I love that I get to travel to meet with really cool people about really cool things and really cool opportunities. 

(I hereby promise to stop using really and cool. Together, 3 times in the same sentence.)

Alas, I can’t wait to get back to some structure and meal planning and dinner execution this week and in the week’s to come. I crave the routine, and the afternoon time in the kitchen preparing food, teaching the boys new tricks for making whatever it is we are making. And I hope to get a live cooking demo in this week too!

Until I ‘see’ you then…here are a few ideas for your meal plan this week…

Southwest Macaroni & Cheese

1 lb. elbow macaroni noodles
8 oz. sour cream
10 oz. Rotel diced tomatoes with green chilies
2 cups cooked black beans, or 15 oz. can black beans
15 oz. can corn
2 cups Mexican blend cheese, or Pepper Jack cheese blend

Mexican Carnitas in the Slow Cooker

1.5 lb pork shoulder or loin
2 Tbsp oil
1 teaspoon ground cumin
2 garlic cloves
1/4 cup lime juice or juice from 1 lime
8 corn tortillas
Salsa, diced avocado, sour cream dollops to garnish
Serve with fresh veggies like Corn Cobs

Spicy Quinoa with Kidney Beans, Corn & Lime

2 cups quinoa
2 tsp minced garlic
1 Tbsp minced onion
1 15 oz. can corn
1 15 oz. can diced tomatoes
1 15 oz. can red kidney beans
1 tsp ground cumin
Fresh cilantro
Juice from 1 lime, optional

Chicken Fajita Nachos

2 cups cooked and shredded chicken
1 Tbsp olive or vegetable oil
2 or 3 peppers
1 large onion
1 Tbsp homemade taco seasoning, or store bought fajita seasoning
Tortilla chips
1 cup shredded cheese
Salsa, sour cream, guacamole, optional toppings
Fresh fruit, baby carrots or other simple side dish

Slow Cooker Peach Glazed Pork Roast

About 1.5 lb pork shoulder roast
About 1/2 tsp minced onion
1/2 cup peach preserves
1 tsp ground ginger
1 1/2 cups brown rice
Serve with 16 oz. frozen green beans, or other veggie

Cinnamon Walnut Quinoa with Raisins

2 cups white quinoa
1/4 cup sweetener (I used brown sugar)
1 Tbsp ground cinnamon
Couple handfuls of chopped walnuts
Couple handfuls of raisins, or dried cranberries
Optional: Milk, cream or yogurt
Fresh fruit to accompany

Salted Caramel Brownie Parfaits

Homemade or store bought brownies
1 small box Caramel flavored pudding
2 cups milk
Drizzles of chocolate and/or caramel syrup
Pinchful of coarse sea salt
