Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

You guys…this week, it’s all happening!

I’m super stoked to be getting to meet Julie this week…she lives just outside of NYC and she’s in desperate need of a grocery budget makeover! I’ll be in NYC Monday through Wednesday for the taping and it’s set to air on Thursday, May 1st (so set your DVRs!)
I can’t wait to help Julie with some practical ideas and new meals to try out during the week. And I hope, you’re encouraged and inspired by her story and the strategies I share in helping her becoming more efficient with her time in the afternoon, as well as her grocery spending!

The Recipes

Kickin’ Sloppy Joes

1 lb Ground Beef
1 14.5 oz Can of Diced Tomatoes with Green Chilies
1 8 oz Can of Tomato Sauce
1/2 Cup Ketchup
1 Tbsp Brown Sugar
Buns or Udi’s Gluten Free Hamburger Buns

Pizza Penne Bake

1 lb. pasta noodles, such as penne, ziti, mostachioli or other “medium” shaped noodle
3/4 cup pizza sauce
1 red bell pepper
1 green bell pepper
About 30 pepperonis
1/4 cup Parmesan cheese
About 1 cup pizza blend shredded cheese

Roasted Maple Mustard Chicken

3 boneless skinless chicken breasts, about 1.5 lbs
1-2 Tbsp minced onion
About 2 lbs. red potatoes
4 carrot sticks
1/4 cup maple syrup
1/4 cup Dijon mustard

Slow Cooker Ranchero Chicken

1 15 oz. can diced tomatoes
1 6 oz. can tomato paste
3 Tbsp homemade taco seasoning
1 lb. boneless skinless chicken breast
1 lb. boneless skinless chicken thighs

Sausage Pizza Kebabs

3 Sweet Italian sausage links
1 red onion
1 each – red bell pepper, green bell pepper, yellow bell pepper
Shredded mozzarella or cheddar cheese
1 cup pizza sauce, for dipping
Grilled garlic bread

Rice Pudding with Mango and Coconut

2 cups leftover or cooked rice
2 cups milk (I used rice milk)
1/2 cup sugar or preferred sweetener
1 tsp vanilla
1 tsp coconut extract (optional)
2 large mangoes
1 cup sweetened coconut flakes

Grilled Banana Splits

4 bananas
About 3 Tbsp sugar
4-8 scoops of ice cream
Toppings – whatever your favorites are!
