I hope and pray you’ve all had a wonderful day celebrating Christ’s resurrection. After an amazing service at church, we enjoyed a delicious feast at my mom’s house. We’re back home and I’m getting ready for the week. I’ve got my meal plan and grocery list printed out and I’m working on what we’ll have. Here are a few ideas for your meal plan this week! The Recipes Grilled Hawaiian Pizzas (use up that leftover ham!) Twice Baked Potatoes (with some grilled chicken or pork chops!) Cheesesteak Sloppy Joes Brinner: Chorizo and Egg Breakfast Tacos – or use ham instead of chorizo Breakfast: Quiche Biscuit Cups – Use ham in place of turkey bacon Dessert: Chocolate Hazelnut Brownies Also, don’t forget to check out the amazing resources at Food on the Table! Grilled Hawaiian Pizzas Store bought or homemade pizza dough Olive oil for brushing 1/2 fresh pineapple 1 cup store bought or homemade pizza sauce 2 cups cooked and diced ham 2 cups shredded mozzarella cheese Twice Baked Potatoes 8 baking potatoes 1/4 cup butter 1/2 cup sour cream 1 tsp garlic powder Shredded cheese, whatever variety you prefer Chives, for garnish Serve with grilled meats and veggies Cheesesteak Sloppy Joes 1 lb. ground chuck 1 green pepper 1 15 oz. can tomato sauce 2 tsp minced onion 1 tsp minced garlic 1 tsp vinegar 1 Tbsp prepared mustard 1 Tbsp brown sugar 4 whole wheat buns 4 slices provolone cheese Serve with fresh fruit and chips Chorizo and Egg Breakfast Tacos – batch cooking recipe 1 lb. chorizo mexican sausage (mild Italian sausage will do too) 10 eggs 1/2 cup milk 1/2 cup salsa Tabasco sauce, optional 1 cup shredded cheddar cheese 24 soft taco or fajita size tortillas Quiche Biscuit Cups Biscuit Dough: 2 cups flour 2 tsp baking powder 1/2 tsp baking soda 1/2 cup butter or margarine 3/4 cup milk Filling: 1 bunch green onions, sliced 6 slices turkey bacon, cooked and crumbled 8 eggs 2 Tbsp milk Handful shredded cheese Chocolate Hazelnut Brownies 1 store-bought brownie mix (or your favorite homemade batter, like this one without the cashews or caramels) 16 dollops of chocolate-hazelnut spread 1 cup of chocolate chips If you are seeing this in an email or in your reader and you’d like to print your grocery list, then click here to access the list feature, which is only available on the website.
