This week we are hitting some favorite slow cooker recipes perfect for fall!  Since I often get asked, I thought I’d show you the slow cooker that I personally use.  It’s a great quality 6 1/2 quart slow cooker that is programmable! I highly recommend it!  But, onto the recipes, shall we?

The $5 Dinners Weekly Meal Plan with Printable Grocery List

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Loaded Slow Cooked Potatoes

8-10 small Idaho potatoes
4 slices cooked bacon
2 Tbsp minced onion
1 bunch green onions
About 1 cup shredded cheese
Couple dollops of sour cream
Fresh fruit or veggie as side

Savory Slow Cooker Chicken and Butternut Squash

3 small chicken breasts (about 1 1/3 lb.)
2 tsps red wine vinegar
1/2 bag baby carrots, or 4-5 peeled carrots sticks
1 butternut squash
2 tsp Italian Seasoning
Serve with whole wheat dinner rolls or toast with butter

Winter Vegetable Chili

1 1/2 lb ground beef
1 small onion
2 garlic cloves
1 15 oz. can diced tomatoes
2 cups beef broth
3 small sweet potatoes
3 carrot sticks
2 large parsnips
1 1/2 Tbsp chili powder
1 tsp cinnamon

Slow Cooker Beef Roast with Apples, Carrots, Red Potatoes & Pearled Onions

1 1/2 to 2 lb. beef roast
3 medium sized apples
1/2 lb. baby carrots or peeled carrots
8 small red potatoes
1 cup frozen pearled onions
Garlic and Onion seasoning

Slow Cooker Ranchero Chicken

(Makes a double recipe)

1 – 15 oz. can diced tomatoes
1 – 6 oz. can tomato paste
3 Tbsp homemade taco seasoning
1 lb. boneless skinless chicken breast
1 lb. boneless skinless chicken thighs

Chana Masala in the Slow Cooker

1 large onion
1 28-oz. can diced tomatoes
1 6-oz. can tomato paste
⅓ C. chopped fresh cilantro leaves
2 tsp. garam masala
2 tsp. garlic powder
1 tsp. cumin
½ tsp. cayenne pepper (more if you like more of a kick)
1 tsp. ground coriander
1 tsp. turmeric
1 tsp. sea salt
2 cans chickpeas
Serve over Basmati Rice

Slow Cooker Macaroni & Cheese

1/2 lb elbow macaroni
12 oz evaporated milk
1 1/2 cups milk
2 eggs
4 cups shredded cheddar

Slow Cooker Apple Crisp

3 lbs apples
1 tsp cinnamon
1/3 cup white sugar
1 tablespoon lemon juice
1 tsp vanilla
1 tablespoon corn starch
1 cup all purpose flour
1 cup quick cook oats (not instant)
1/4 cup white sugar
1/2 cup brown sugar
1/2 tsp cinnamon
6 tablespoons butter
