I’m headed out of town this weekend for a conference. And while I know my husband plays a wonderful Mr. Mom when I travel, I like to make it as simple as possible for him to get dinner on the table for himself and the kids! (There’s that simple word again.) Usually, there isn’t a whole lotta time to spare from the time he walks in the door from work and when the kiddos bellies start growling for dinner. So, the faster and easier for him, the better for everyone!
I’ll be away from Thursday to Sunday, so I’ll plan to leave 2 “slow cooker packs,” sausage and eggs for a simple “brinner,” and they can go out to eat on a “daddy date” this weekend!
Slow Cooker Packs
- Sweet Potato and Chicken Curry
- Beef Roast with Apples, Carrots, Red Potatoes and Pearl Onions (except I’ll use stew beef cubes instead of roast, because that’s what I have on hand!)
What do you do for your spouse when you leave town for a few days or go out for the night? Make it simple for them? Let them fend for themselves? Order in?

Thank goodness mine likes to cook for himself or he’ll pull out an individual freezer meal.
My husband has no clue about cooking and one of my children is on the spectrum and is EXTREMELY picky so when I ever am away for the night I like to precook chicken enchiladas, its very cheap to make, stores well and everyone loves ‘em!
Mine is clueless too. When my 2nd daughter was born, I had a nice chicken and rice casserole in the fridge. My 1st daughters favorite. When my husband came the next morning, I asked how the casserole was. He forgot about it, on the first shelf and ready to go. Instead, they ate eggo waffles and green beans. It didn’t go to waste though, my sister came to town and fed them good the next night.
Oh my! That is quite the dinner! I love it!

Usually when I go out of town, I take our little one with me, so the hubs just fends for himself. I was sick a couple of weeks ago though and couldn’t muster up the energy to cook dinner. You know what hubby made for us? Instant mashed potatoes and he warmed up some canned corn. That’s all! I told him that wasn’t really a full dinner so he heated up a can of Spaghettios! Haha!
My hubby does pretty well when i’m gone. I usually make sure there are leftovers, or something not hard for him and there’s canned soup as well. Since he gets home before me 4 days a week from work, I have dinner planned out and I write a note of what he needs to do. I try to make a big batch of soup or pasta on Friday and then we can have it once during the following week.
This week I’ve had a cold and I didn’t plan meals well. But there was enough food in freezer that we could make something. Last night was left over tricolored pasta with tuna and veggies. I’d made it last week. So now that I’m feeling better, next week’s meals will be planned. sigh!
this is FUNNY!!! My hubby wouldnt let me leave him alone for dinner. he gets frustrated when I ask him to make dinner (spaghetti or bacon sammys) on difficult nights after I homeschool our special needs son. he lets things burn and does things half arse so iIwill take over or he feels that he can go to the dollar menu with money we dont have. Oops sorry a little of long marriage frustration showing LOL
