Y’all…I wanted to give you a heads up that change is a-comin’ again. The site continues to evolve and change as we see and hear your needs. One of the ways that we will continue to make improvements is in our meal planning. For years, I’ve offered this weekly meal plan for free…but it costs me a great deal of time and money to prepare each week. Soon, I will transition this weekly meal plan to our new paid meal planning subscription service. You can find out more information at We are currently in a closed private beta and are learning a great deal from our beta users’ feedback. I look forward to bringing this new, improved and more comprehensive plan to you each week!

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Seven Layer Tostadas

8 tostada shells
1 can refried beans (or 2 cups homemade refried beans)
1 chicken breast, shredded, or about 2 cups
2 avocados
1/2 tsp ground cumin
2 Tbsp lime or lemon juice
Chopped peppers
Canned, or cooked black beans, about 1 cup
About 1/2 cup salsa
8 pinchfuls of shredded cheese

Grilled Citrus Tilapia Packets

1 cup brown rice
4 tilapia fillets, about 1 1/4 lb. total
1/2 tsp ginger
1 lemon
1 orange
12 oz. steamfresh green beans

Sloppy Joe Bowls

1 lb. ground beef
15 oz. can tomato sauce
1 Tbsp mustard
1 Tbsp vinegar
1/4 cup plus 1 tsp homemade sloppy joe mix
1 1/2 cups brown rice
about 1 to 1 1/2 cups shredded Colby jack or cheddar cheese
Fruit or veggie side dish

Eggplant Pizza Bites

3 8-10 inch fingerling eggplants
2 tablespoons olive oil
1 cup pizza sauce or leftover spaghetti sauce
1/2 cup shredded mozzarella
garlic powder

Roasted Red Potato Salad

13 small red potatoes
3 sprigs of rosemary
Drizzles of olive oil
1/2 cup mayonnaise
1/2 cup milk
1-2 Tbsp Dijon mustard

Overnight Baked Oatmeal

4 cups quick cooking oats
3/4 cup brown sugar
1 Tbsp baking powder
2 eggs
2 cups milk
2 tsp vanilla extract
Toppings – milk, yogurt, cream, berries, sliced bananas, favorite fruit

Slow Cooker Pear & Blueberry Crumble

3 Anjou pears
1 pint blueberries
about 1 Tbsp lemon juice
1 tsp cinnamon
1/2 tsp ginger
Dash of cardamom, optional
1 1/2 cup quick oats (or substitute with certified GF oats)
1/2 cup flour (or substitute with GF Flour mix)
1/4 cup sugar
1/3 cup butter (or substitute with dairy-free margarine)
Optional: ice cream or whipped cream topping
