The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

How is it the last day of June? I knew going into June that it would fly by. But really, it flew…like mach speed kinda flew by. And as always, we have some great dinner and breakfast ideas for this week as you prepare for the 4th of July!

Curried Turkey Salad

2 cups leftover turkey
1 large sweet potato or yam
2 cups cooked rice ( I usually use leftover rice)
1 apple
2 stalks celery
1 cup dried cranberries
1/2 cup pecans
3 green onions
3/4 cup plain yogurt (or 6 oz. container)
1 tablespoon honey (or sugar)
1 1/2 teaspoon curry powder
1/2 teaspoon ground ginger

Inside Out Cheeseburgers on the Grill

1.4 lb. ground chuck
1 Tbsp steak seasoning
2 Tbsp Worcestershire sauce
4 slices cheese
4 Sandwich Thins
Lettuce, ketchup and mustard
Serve with fresh fruit

Grilled Orange Sesame Chicken Wraps with Asian Cole Slaw

3 chicken breasts, grilled
2 cups orange juice
2 Tbsp toasted sesame seeds
4-6 burrito size whole wheat tortillas
Pineapple, or other fresh fruit

Asian Cole Slaw

1 12 oz bag cole slaw mix
1/3 cup mayonnaise
1 Tablespoon soy sauce
1 Tablespoon sesame oil
1 Tablespoon peanut butter
1 teaspoon ground ginger

Garden Pasta Primavera

16 oz. rotini pasta
2 chicken breasts
1 summer squash
1 zucchini squash
about 1 cup grape tomatoes
Handful of sugar snap peas
2 Tbsp butter
2 Tbsp flour
2-3 cups milk
2 tsp red wine vinegar

Baked Mac & Cheese Balls

1 box of mac & cheese (any kind you like)
3 eggs
1 cup flour
2 cups Italian bread crumbs
1 tbs olive oil

Easy Huevos Rancheros

10 eggs
1/2 cup organic black bean salsa
1 cup shredded cheese
Couple slices bread or tortillas
Serve with fresh fruit

Black Bean Coconut Brownies

3 cups pureed black beans (I filled up the blender to the 4 cup line and added a little water)
2 cups sugar
1 tsp vanilla
1/2 cup milk
1 1/2 cup flour
1/2 cup cocoa
1 Tbsp baking powder
1 tsp baking soda
1 cup shredded coconut (unsweetened) (and optional)
2 cups semi-sweet chocolate chips
