The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Well, last week was a rough one for the Chase family. 3 of the 4 boys came down with rotavirus, despite all of them being vaccinated against the virus. It was DAYS of lying around, cleaning up after the kids, washing hands, lysoling (is that a word?!) everything in the house, doing load after load of laundry…but at the same time, it was time of rest for us all, and I got a long break from cooking.

I’m so grateful for the quick diagnosis and that we knew right away and could stay ahead of the dehydration!
After all the insanity and being off schedule and out of routine, I’m looking forward to everyone’s appetite being back in proper working order and being able to enjoy family meals around the table again!

The Recipes

Spinach & Chicken Layered Enchiladas

2 cups cooked, shredded chicken
8 oz. container sour cream
10 oz. boxes frozen spinach
1 Tbsp minced onion
1 tsp minced garlic
1 tsp ground cumin
10 soft taco size flour tortillas
10 oz. cans green chile enchilada sauce
2 cups shredded Mexican blend cheese

Burrito Cups

2-3 cups cooked rice
1 15 oz. can black beans (or 2 cups cooked black beans)
about 1/2 cup shredded cheese (omit for dairy free!)
2 avocados
about 1 cup chunky salsa
Cilantro, optional garnish
Other burrito cup mix-ins ideas – taco meat (homemade taco seasoning), taco meat with beans, shredded chicken, taco meat, sour cream, other favorite burrito fillings
Tortilla chips, optional

BBQ Chicken Topped Potatoes

4 to 6 baking potatoes
1 lb. chicken breasts or thighs
About 1 cup BBQ sauce
Butter, salt and pepper for potatoes
Shredded Cheese for topping
Serve with fresh veggies like 1 lb. baby carrots

Chicken Bacon Ranch Wraps

1 package Kraft Fresh Take, Cheddar Jack and Bacon
1 1/4 lb. chicken tenderloins
10 soft taco size tortillas
10 pinchfuls of lettuce
1 tomato or 1/2 cup grape tomatoes
1/4 cup homemade ranch dressing
Serve with a side of fresh fruit

Slopp-Cheesy Joe Sliders

1 lb. ground beef
1 15 oz. can sloppy joe sauce
8 to 10 dinner rolls
4 cheese slices
Fresh fruit and veggies – apples & broccoli for us

Ham & Potatoes with Baked Eggs

1 Tbsp olive oil
1/2 bag (28 oz.) frozen diced Potatoes O’Brien (or 3 cups diced gold potatoes)
2 cups ham (or 2 chicken and apple sausage links)
4 eggs
Dash of Italian seasoning for serving
Side of fresh fruit

Pistachio Pudding Parfaits

1 8 oz. tub Cool Whip
2 oz. cream cheese
1/2 cup powdered sugar
2 packages Pistachio instant pudding (plus milk)
Handful of Pistachios
Handful crushed vanilla wafers for each serving
