Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

I hope and trust that everyone had a blessed Easter! Our family enjoyed a morning of worship, followed by a lovely and simple Easter lunch at our house with family and friends. Followed by a visit (with a plate full of Easter dinner food and cupcakes!) to our newest soldier friend stationed here in San Antonio. It was a lovely, restful and rejuvenating day!

Our Easter supper menu: Ham with Sherry Glaze, Scalloped Potatoes, Roasted Asparagus, Mixed Greens with Strawberries and Almonds, Garlic Bread & my mom picked up some adorable and scrumptious cupcakes for dessert.

So our menu this week is very erratic, as I’m out of town in Florida for 2 nights and we have several Fiesta events to attend as well this week. AND to top it all off, I’m hosting a shower for our church this weekend. Busy, busy, busy.

But I’ve got a plan for the night’s that I need a plan. :)

Yay for plans. Plans, plans, plans.

Slow Cooker Mango Chicken

6 small boneless skinless chicken thighs (about 1 1/3 lb.)
Olive oil, drizzles
Red wine vinegar, drizzles
Garlic powder, sprinkles
1 small red onion
1 medium zucchini
1 15 oz. can diced tomatoes, drained (or 2 medium garden tomatoes)
1 mango

Beef Fajita Skillet Dinner

1 Tbsp olive oil
3/4 lb. beef for stir-fry
1 Tbsp homemade taco seasoning
1 12 oz. frozen pepper and onion blend
1 15 oz. can diced tomatoes with garlic (or without will work too!)
6 corn tortillas
Cantaloupe, watermelon or other refreshing fruit for side dish

Ham & Cheese Breakfast Egg Tacos

8 eggs
1/4 cup milk or rice milk
8 cheese slices or about 2 cups shredded cheese
8 sliced ham
Optional – sauteed veggies, peppers/spinach/onion
Serve with fresh fruit

Salsa Verde Beef Street Tacos with Cilantro Slaw

2-ish lb. chuck roast
1 tsp ground cumin
1 to 1 1/2 cups salsa verde
12 oz. bag shredded cabbage or cole slaw mix
Small bunch of cilantro leaves
3-4 Tbsp homemade or store bought vinaigrette
Goat cheese or cotija cheese, for topping
Other topping idea: sliced or diced avocado

Cheddar Chicken BLT

2 chicken breasts
1 Cheddar Bacon Fresh Take bag
4 bolillo rolls
1 large tomato
Lettuce
Mayo

Loaded Potato Frittata

6 slices turkey bacon (optional)
4 medium Russet potatoes
8 eggs
1/2 cup milk
1/4 cup sour cream
1 1/2 cup shredded cheddar cheese
1 bunch green onions
Serve with fresh fruit

Salted Caramel Mocha Fudge

1 cup butter
2 cups brown sugar
1 13 oz. can Dulce de Leche flavored caramel sauce
1 cup chocolate chips
2 tsp instant coffee granules
1 tsp coarse sea salt
about 1 Tbsp coarse sea salt for topping
