The $5 Dinners Weekly Meal Plan with Printable Grocery List

Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

T-minus 10ish days and counting. With Thanksgiving this coming up fast on our heels, we’ve got another simple meal plan for you this week.

Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Spaghetti with Erin’s Chunky Spaghetti Sauce

1 lb. ground beef
1 Tbsp minced onion
2 garlic cloves, crushed
2 15 ounce cans diced tomatoes, undrained
2 tsp Italian seasoning
1 tsp sweetener (or honey)
Pinchful of fresh herbs
Shredded or grated parmesan, couple pinchfuls
Serve over pasta and with a side salad

Lasagna Buns

6 sub rolls or bolillo rolls
About 2 cups spaghetti sauce with meat
1/2 cup sour cream (use 1/2 cup ricotta if you prefer)
1 egg white
1 tsp Italian seasoning
2 cup mozzarella cheese
1/4 cup Parmesan cheese
Serve with a side of vegetables or salad

Omelets with Caramelized Onions and Bacon Crumbles

2 white onions
1 Tbsp olive oil
1 Tbsp sugar
12 eggs, or 3 eggs per omelet
1/2 cup milk
4 slices bacon
1 red pepper
Feta cheese, about 4 ounces
Serve with fresh fruit

Slow Cooker Chicken and Butternut Squash

3 small chicken breasts (about 1 1/3 lb.)
2 tsp red wine vinegar
1/2 bag baby carrots, or 4-5 peeled carrots sticks
1 butternut squash
2 tsp Italian seasonings
Serve with whole wheat dinner rolls or toast with butter

Pumpkin Spice Baked Oatmeal {with Gluten Free variation!}

2 eggs
1/2 cup applesauce
1/2 cup oil
3/4 cup canned pumpkin (1/2 of 15 oz. can)
2 1/4 cups milk
1/4 cup maple syrup or syrup
1/2 cup brown sugar
2 1/2 teaspoon homemade pumpkin pie spice
1 Tablespoon baking powder
1/2 cup wheat flour
4 cups quick cooking oats
Serve with milk, yogurt, Greek yogurt, or as is
