Scroll down and you’ll see a list of ingredients for each of the recipes included, in the order they are listed above. I’ll include ALL ingredients, including many that you already have in your pantry, refrigerator, or freezer. If you have those ingredients, just don’t click them!

Buffalo Chicken Pizza with Blue Cheese & Caramelized Onions

1 homemade pizza crust recipe
2 Tbsp olive oil
1 Tbsp sugar
1 white onion
2 cups shredded chicken
1/4 cup Frank’s red hot sauce
1/2 cup pizza sauce
2 cups shredded mozzarella cheese
3 oz. crumbled blue cheese

Slow Cooker Peach Glazed Pork Roast

1.5 lb. pork shoulder roast
About 1/2 tsp minced onion
1/2 cup peach preserves
1 tsp ground ginger
1 1/2 cups brown rice
Serve with frozen green beans, or other veggie

Slow Cooker Chili with Skillet Cornbread

1 bag Hurst Slow Cooker Chili Beans and seasoning
1 lb cooked ground beef
1 small onion
1 small pepper
1 15 oz. can diced tomatoes
1 6 oz. can tomato paste
Skillet Cornbread recipe
Side dish – fresh or frozen veggies

Cilantro Lime Chicken Enchiladas

2 cups shredded chicken
2 avocados
couple cilantro leaves
1/4 cup sour cream
1/4 cup lime juice
1 tsp ground cumin
12 flour tortillas
1 10 oz. can green chile enchilada sauce
1 – 1 1/2 cups shredded queso quesadilla or Mexican blend cheese
Serve with fresh fruit, carrots or corn cobs

Sesame Pulled Pork Lettuce Wraps

About 1 pound BBQ pulled pork
3 Tbsp soy sauce
2 tsp sesame oil
1 tsp garlic powder
1 tsp onion powder
1 tsp ground ginger
Large or small lettuce leaves
1 medium carrot
Serve with cooked sweet potatoes

Avocado Egg Breakfast Sandwich

6 eggs
6 English Muffins
6 slices cheese
6 Spoonfuls of Salsa
1 avocado
Lemon or lime juice
Serve with a side of fresh fruit

Mango & Coconut Rice Pudding

2 cups leftover or cooked rice
2 cups milk (I used rice milk)
1/2 cup sugar or preferred sweetener
1 tsp vanilla
1 tsp coconut extract (optional)
2 large mangoes
1 cup sweetened coconut flakes

Frozen Banana Bites

2 large bananas
1/4 to 1/3 cup vegan chocolate chips (or regular)
1/4 to 1/3 cup natural peanut butter
Unsweetened coconut flakes

Pistachio Pudding Parfaits

1 8 oz. tub Cool Whip
2 oz. cream cheese
1/2 cup powdered sugar
2 packages Pistachio instant pudding (plus milk)
Handful of Pistachios
Handful crushed vanilla wafers for each serving
