Every week I will post 5 links to archived recipes, plus an additional 1 or 2 recipes for breakfast, snacks or batch cooking recipes.  You can click through to see the original recipe and print that recipe if you like. (Or go green and just come back to this post to get to the recipe.)

Tricia’s Slow Cooker Macaroni and Cheese

1/2 lb elbow macaroni, cooked
12 oz evaporated milk
1 1/2 cups milk
2 eggs
4 cups shredded cheddar

Taco Bites

1/2 pound ground beef (or leftover taco meat)
1 Tbsp homemade taco seasoning
1/2 small onion
1 small orange or yellow pepper
Tostitos Scoops Chips
Dollops of salsa on each
Pinchful of cheese on each
Serve with brown rice and refried beans

Stovetop Italian Chicken with Potatoes

2 Tbsp olive oil
1 Tbsp balsamic vinegar
8 bone-in chicken thighs
About 2 lbs red potatoes
4 carrots
1 small onion
1 15 oz. can diced tomatoes
2 tsp Italian seasoning

Caesar Salad Wedge

1 Romaine lettuce head
1/4 cup Caesar salad dressing
Couple pinchfuls of shredded Parmesan cheese
Fresh cracked pepper
Other topping ideas: grilled and sliced chicken, bacon crumbles, tuna, finely chopped tomatoes

Alea’s Vegetarian Enchilada Stuffed Zucchini

4 medium zucchinis
1 cup cooked rice
1/2 cup cooked black beans
1/2 cup corn
1/2 cup tomato
1/4 cup onion
1/4 cup bell pepper
1 teaspoon taco seasoning (homemade taco seasoning mix)
1 cup enchilada sauce (homemade enchilada sauce recipe)
1 cup cheese

Ham and Hashbrowns with Baked Eggs

1 Tbsp olive oil
1/2 bag (28 oz.) frozen diced Potatoes O’Brien
2 cups ham
3-4 eggs
Dash of Italian seasoning for serving
Serve with a side of fresh fruit

Cashew Caramel Brownies

4 oz. bittersweet baking chocolate
1 cup (dairy-free) margarine or butter
2 cups chocolate chips
4 eggs
1 3/4 cup sugar
2 tsp vanilla
1 cup flour
1 tsp baking powder
20 caramel chew candies
1 cup cashews
