Yes, it’s true – the $4.99 Rotisserie Chicken is still holding on as their most famous and popular “loss leader.”

Last week, I stopped into store to stock up on a few household and food essentials. I decided to see how far I could “stretch” 2 of the rotisserie chickens and I’m thrilled to share the results with you here.

I managed to make 4 meals for my family of 6 (Yes, Ryan is not home…but I made the same as I would have if he were here…in part to have leftovers…and in part because I haven’t figured out how to reduce my regular cooking amounts! lol)

In addition to these 4 meals, I also made several cups of chicken stock by boiling the boys and meat. I diluted it with some water and then frozen in both ice cube trays and 1 cup portions.

From these 2 $4.99 rotisserie chickens, I made…

  • 9×13 pan of Chicken Ranch Mac n Cheese
  • 6 plates of Buffalo Chicken Nachos
  • 12 BBQ Chicken Sliders
  • 6 portions of Chicken Fajita Quesadilla/Nachos
  • about 8 cups chicken stock

**Note: I did freeze a meal’s worth of chopped chicken with dry Ranch mix for the nachos, and another meal’s worth for the sliders. This keeps us from eating chicken meals 4 days in a row. 😉

I did my best to use ingredients that I already had in my pantry (ranch dressing, pasta, tortilla chips, shredded cheddar and mozzarella, butter, etc.)

I bought the slider buns, tortillas, buffalo wing sauce and blue cheese – that’s it!

For side dishes, I did a combo of fresh fruit from the fridge and frozen veggies I already had on hand.

Love it when I’m able to stretch this chicken as far as possible, using ingredients from the pantry and freezer . I hope this inspires you to do the same for your menu!

Even if you can’t get this $4.99 deal from Costco, it’s definitely worth checking prices of rotisserie chickens from your local store to see if it’s worth buying 1-2 and stretching them as far as you can!
