    Hello and happy January!

    It’s another month with 31 days, so another 31 Days series here on $5 Dinners. This month, I’ll be featuring all kinds of great recipes and “hacks” for rotisserie and/or shredded chicken.

    Having shredded chicken in the freezer is one of my most popular and most recommended cooking hacks…because we you have the chicken already cooked and shredded, you’re part way down the road to getting a meal prepared. You don’t have to worry about cooking the chicken or prepping it in advance when it comes time for dinner.

    You can just quickly thaw the pre-cooked and shredded chicken, then use it to make enchiladas, quesadillas, soups, stews, chili and more!

    I’ll be sharing more tips, “do it yourself” options & loads of recipes this month!

    But I’m kicking off with a great video on how to pull chicken off of a rotisserie chicken, so you can shred it and use in all kinds of recipes! (And of course, you can just eat the meat from the chicken…but I like to stretch the meat into 2 or 3 meals from 1 rotisserie chicken. I usually end up just pulling it all off and shredding it.)
