Roasted Brussels Sprouts with Feta
Ingredients
- 2 boxes feta cheese
- 16 Brussels sprouts halved
- 1/4 cup olive oil drizzled generously
- salt sprinkled on top
Instructions
- Preheat the oven to 425 F.
- Add the feta cheese into a single layer, pressing tightly into a 9x13-inch baking dish. I used a measuring cup to press the feta cheese together.
- Cut the Brussels sprouts lengthwise, and nestle into the layer of feta, with the rounded side sticking up. Drizzle generously with olive oil and sprinkle with a tough of salt over the top.
- Roast in the preheated oven for 25 to 30 minutes, or until the Brussels sprouts and edges of the feta begin to golden. Let cool slightly before spooning onto serving plates. Enjoy!
