    Love me some street tacos. Both when I order them from a taco truck…when I make them at home!

    These have just the right amount of spice, zest and crunch!

    (And salsa verde is not spicy at all, so don’t let the potential spice turn you away from these amazing tacos.)

    Slow Cooker Salsa Verde Beef Tacos

    This beef has stellar flavor! MUST MAKE TACOS AT HOME!
    Prep Time10 minutes
    Cook Time8 hours
    Servings - 12 servings

    Ingredients 

    • 2 lb. beef chuck roast
    • 1 tsp ground cumin
    • Salt and pepper
    • 1 1/2 cups salsa verde
    • 12 oz. bag Coleslaw mix with dressing
    • 12 corn tortillas
    • Cotija cheese and/or avocado slices garnish
    • Fruit side dish

    Instructions

    • Place the beef in the base of the slow cooker and season with the ground cumin, salt and pepper. Pour the salsa verde over the beef. Set the slow cooker on low and cook for 8 hours. Once cooked, shred the beef for the tacos.
    • Before serving, prepare the slaw in a mixing bowl.
    • Assemble tacos by placing some shredded beef in the middle of the tortilla, and top with the slaw and optional garnishes.
    • Prepare fruit.
    • Serve Slow Cooker Salsa Verde Beef Tacos with Coleslaw and fruit.
