Beefy Ranch Tortellini Soup
Ingredients
- 1 lb ground beef browned
- 1 Tbsp minced onion
- 1 tsp garlic powder
- 10 oz. can cream of mushroom soup gluten-free if needed
- 1 cup milk
- 2 cups beef broth
- 2 Tbsp Ranch dressing mix 1 packet
- 20 oz. box cheese tortellini
- salt and pepper to taste
- grated Parmesan cheese optional garnish
- fresh veggies or salad side dish
Instructions
- In a large stockpot or Dutch oven, brown the ground beef with the minced onion and garlic powder. Drain fat if needed.
- Add the cream of mushroom soup and whisk with the milk, beef broth and Ranch dressing mix. Bring to bubbling.
- Add the tortellini to the soup and let cook for 3 to 4 minutes. Remove from heat and serve with optional Parmesan cheese garnish.
