The Perfect Scrambled Eggs

July 9, 2010 by Erin, The $5 Dinner Mom 13 Comments

So we all know that I'm having a love affair with avocados this summer. But that's not the reason that these scrambled eggs are perfect. There are probably 7 gazillion ways to make the scrambled eggs, but I'm going to share with you 5 tricks that will help you make the perfect scrambled eggs. 1. Milk - Add the same number of teaspoons of milk as you have number of eggs. 8 … [Read more...]

July 7, 2010 by Erin, The $5 Dinner Mom 7 Comments

(Sorry about the funny photos this week...I posted them from our desktop and it does weird things to them?!) Here's what I love about this recipe. You can make a ton of the "filling" and use it so many different ways! The recipe for the filling that I will post below will easily stretch into 3 meals! You could... Stuff the filling into green peppers, or other bell … [Read more...]

Slow Cooker Mexican Carnitas

July 6, 2010 by Erin, The $5 Dinner Mom 21 Comments

Simple. Fuss-free. Tasty. (The only thing I wish I'd done before serving these was toast the tortillas in a hot skillet...just 30 seconds per side...give them a little flavor boost.) I have been waiting to make these since the beginning of March! Rather, these have been waiting for me to make them since the beginning of March!!! Slow Cooker Mexican … [Read more...]

All Green Salad with Grilled Chicken

July 5, 2010 by Erin, The $5 Dinner Mom 9 Comments

On Friday night we grilled chicken and kebabs and there was quite a bit leftover chicken. So I sliced it and added it to a salad, as I still had some of the $1 lettuce bags from last week's trip. (We are now waiting for more lettuce leaves to grow in the garden after the first round of picking. I have been using a few leaves at a time for wraps or sandwiches too.) As I went … [Read more...]

Linguini with Bacon and Swiss Chard

July 3, 2010 by Erin, The $5 Dinner Mom 6 Comments

Until recently, I'd never consumed Swiss chard.  What a shame! It was really quite tasty and it will definitely be growing in my garden next year!! I picked up some Swiss Chard at the farmer's market for $3 for a huge bunch. While I could have just used the Romaine or Bibb I have in my garden, I wanted to "expand my horizons" and try a new "green." So Swiss Chard it … [Read more...]

Grilled Taco Burgers

July 1, 2010 by Erin, The $5 Dinner Mom 8 Comments

So I'm just not that into plain burgers these days. After buying up all sorts of spices and making myself several cups of homemade taco seasoning, I figured the least I could do was use some to make taco burgers!  This is not an exact recipe...so I shall give you how much you should use per pound of meat. Here's one of my new favorite burgers... Grilled Taco … [Read more...]

Chickpea Tuna Salad

June 25, 2010 by Erin, The $5 Dinner Mom 8 Comments

This is a protein rich meal or side dish. Also, I'm not a HUGE fan of tuna without mayonnaise or sandwich spread mixed with it...too "fishy" for me.  But this didn't leave me feeling fishy after eating it. The lemon juice, dill and other flavors made the un-mayonized tuna totally edible.  And I actually ended up kinda liking it. (Perhaps I'm turning over a new tuna … [Read more...]

Mango Chicken Lettuce Wraps

June 23, 2010 by Erin, The $5 Dinner Mom 7 Comments

I have been itching to make some lettuce wraps ever since getting my lettuce transplants from the store earlier this year. I've been waiting for the leaves to grow larger enough to actually wrap...and that time is now. When I learned about Chris Lilly and his Grilled Chicken Lettuce Wraps with Spicy Mango Marinade recipe from KC Masterpiece, I was inspired. I made … [Read more...]

How to “Process” a Large Zucchini

June 23, 2010 by Erin, The $5 Dinner Mom 18 Comments

Use these 3 ways to process and prepare zucchini for the freezer so your fresh vegetables don't go to waste! So after we dropped my mom off at the airport this past weekend, we made a spontaneous stop at the 2nd Street Market in Downtown Dayton.  I don't make it up there on a regular basis, but I thought since we were nearby we'd stop in.  I asked Steve how much … [Read more...]
