Whole Wheat Banana Chocolate Chip Muffins
(Sorry about the sun glare. It's an iPhone photo!) Those were the ones left after Round 1. About 3 minutes after the photo was taken, they were gone! Last week, I tweeted this: I had the pleasure (and it really was a pleasure, despite my dramatic tweet) of taking care of my dear friend's 2 boys while she had back surgery. They spent the night and stayed with us … [Read more...]
Popsicles for Dinner?!?
So it appears that boy #1 managed to catch strep throat from boy #2. I can't say that I'm surprised. After all, boy #1 did drink from boy #2's cup just minutes after I warned him not to. (And when the time is right, we'll have the 'natural consequences' talk that will go something like this...Remember when mommy told you not to drink from your brother's cup so you don't get … [Read more...]
Bacon, Broccoli and Tomato Pasta Salad
Pictured above: the mixins. This is a quick and easy pasta salad. And quite refreshing too. (Too bad, it's cool and wet outside today!) Bacon, Broccoli and Tomato Pasta Salad A little bit of crunch and a lot of great flavor! 2 cups elbows or penne pasta noodles 6 strips of bacon or turkey bacon 2 heads broccoli, cut into florets 15 oz can diced … [Read more...]
Grilled Salsa Chicken
Alrighty friends...here is the Grilled Salsa Chicken that I intended on posting last night. But my day just didn't play out as I thought it would and I did not get a chance in the early evening to get it all together! A big thanks to Steve for photographing some of the pictures below. You might notice that 2 hands are in the photographs, and I don't quite trust Ryan with my … [Read more...]
Baked Black Bean and Salsa Chicken
See that corn up there?!? The "summer price" of $.25/ear is here a bit early this year! I couldn't help myself and snagged a few for this week. The boys L-O-V-E corn and I love watching them munch it off the corn. It's sorta cute! This *might* just become my new "go-to" meal. It's way low maintenance...as long as you get it into the oven in time! It was delicious … [Read more...]
Lettuce Burger Wraps
So we made our burgers this past Sunday night. And there were only enough buns for Steve and Grandma. I could have used regular bread instead, but I went for the lower calorie option. (Shedding postpartum baby weight is taking a little longer this go around!) I just took some of the large leaves from a Romaine lettuce head and wrapped the patty up with some red onion and … [Read more...]
Meals for “Practice Nights”
T-ball has begun. And the weekly practice is right smack dab in the middle of our normal dinner hour. Really, it's during the entire dinner hour. Thus far in my career as a mother, I've managed to schedule our activities around our normal meal times. But this one is just beyond my control! (And I know this won't be the only time that practices and recitals … [Read more...]
Grilled Tilapia
I dug out some tilapia fillets from the depths of the freezer. Thankfully they were vacuum packed and in another freezer bag, so they almost as good as fresh! I wanted to grill the fillets straight on the grill, but they were too thin...so I "foil grill" it is. And we'll round out the meal with Buttery Succotash with Dill and Grilled Garlic Bread. Tilapia on the … [Read more...]
Slow Cooker Balsamic Beef and Onion Pasta
Remember the Slow Cooker Beef Roast with Balsamic Onions?!? Well, you should just bookmark it now and make it next time you have a beef roast on hand. Or better yet, toss it with some pasta and might I say you won't regret it! I used up a BOGO beef roast from the freezer, a yellow onion and some $.50/box pasta. Along with half of a $1 green pepper and a $.99 Romaine … [Read more...]
