Alright breakfast party people! Let’s talk about these breakfast sandwiches for a second. These babies are the vegetarian alternative to the sausage, egg and cheese mcmuffin sandwiches that are featured in the recent “85 Breakfasts & Snacks” Costco Meal Plan! Take out the sausage, add in mashed avocado. Add a few cilantro leaves to the eggs before you bake them, KA-BAM, delicious!
I like to add a little salsa for some extra kick and flavor!
