We've got another 'sub for the same cost' kinda recipe here. Even in the land of ridiculously cheap tortillas, a bag of 10 tortillas costs a smidge more than a head of iceburg lettuce. So the non-Paleo ingredient in Korean Beef with slaw tacos can be easily swapped for lettuce without affecting the cost! Yay for budget-friendly Paleo. Tips for hacking this … [Read more...]

But, it's crazy delicious and only calls for a few ingredients! And I really wanted to share it with you! Treat yourself with this one sometime! Add salt and pepper and red curry paste to the salmon … [Read more...]

It would be awkward if I told you that I wanted to lick this Pyrex dish, wouldn't it? That would be awkward, and I try not to be awkward. But... I really wanted to lick the Pyrex after having these roasted veggies. Sorry, I know it's awkward, but I can't help it. These veggies are my favorite veggies, ever. They really are. Paleo Moroccan Chicken
Holy flavor-wow! Who knew that these common pantry staples could transform chicken into a divine masterpiece! There is absolutely nothing expensive about any of these ingredients. Nothing at all. You might have most of them on hand right now. (Except maybe sugar-free raisins/currants. If you aren't strict Paleo, you can use regular raisins.) The cinnamon. The cumin. … [Read more...]

Taco Zucchini Boats
I think it's fair to say that this meal would cost just the same as a regular tacos meal. This could be one of the few regular turned Paleo meals where I could say that with confidence, the price wouldn't be different. Here's why... Box of taco shells = $2 4 zucchini = $2 (maybe less, depending on sales...summer is coming up and zukes get crazy cheap!) Rest of the … [Read more...]
Basil Balsamic Chicken
While this is pictured sitting on a bed of rice, you could certainly serve it with some mashed sweet potatoes or cauliflower 'rice.' I've shared this before, but my cooking style and philosophy is pretty conducive for making Paleo meals and mixing and matching the side dishes. This is a prime example. A simple marinade for the chicken and serve it with 2 Paleo-approved sides … [Read more...]
Bacon Burger Lettuce Wraps
If you look at enough Paleo recipes or Paleo websites, you'll start to see a theme. A bacon theme. This is my own observation and assumption, but Paleo peeps are obsessed with bacon. I've got no problem with that, because I'm obsessed with bacon, too. When I was sketching up the new recipes that I'd share this month as part of the 31 Days of Budget-Friendly Paleo recipes, … [Read more...]
Monkey Breakfast Salad
See that bowl right there. That's what I have for breakfast 6.5 mornings out of 7. It's usually all in the same bowl, but sometimes on the mornings I run, I'll grab a banana on my way out the door and eat it as I drive to the trailhead. Then I'll have berries and almond butter after my run and then carry on with my morning. I love this breakfast because it's delicious, … [Read more...]
