Broccoli Topped Potatoes

This made for a perfect after church meal. Quick and easy…well, only if you bake the potatoes before you leave for church! Leftovers tonight.
Ingredients
6-8 medium white potatoes ($.75) Potatoes are cheap everywhere right now!
2-4 T butter ($.35)

Apple Walnut Pork with Green Beans and Wild Rice

So there was a BOGO (buy one get one free) internet printable coupon not too long ago for Uncle Bens wild rice boxes. I grabbed 2 boxes knowing that there was a “seasoning packet” inside. I bought them so I could have a warm “wild rice” meal sometime this fall…and what a perfect day!
