Wake Up to This Refreshing, Tropical Treat with This Mango Overnight Oats Recipe

Ideal for busy mornings, these Mango Overnight Oats will provide a quick, healthy, and delicious start to your day!

These are inspired by the (somewhat…no, very expensive) overnight oats from a local grocery store. I’ve tried two of the flavors and decided that this summer, I would be making these on repeat!

I love the tropical twist that the freeze dried mango brings to these oats – THEY ARE AMAZING.

It’s just 4 ingredients, plus some small glass jars – these 4 oz. jelly jars are perfect. If you have the larger 8 oz. jars, you can use those…just double the recipe below.

Essentially the recipe is…

Equal parts LIQUID – OATS.

And the liquid is half coconut water and half mango nectar.

For the 4 oz. jars…

  • 1/4 cup oats – 1/4 cup liquid per jar
  • 1 cup mango nectar + 1 cup coconut water, total for all 8 jars

Makes 8 jars of Mango Overnight Oats.

So…just do the math for whatever size jars you are using!

Alright, enough with the numbers…here’s the RECIPE!!!

Oh, but first…

This is also a great gluten-free, dairy-free breakfast option if you use certified gluten-free oats.

AND…

You can mix different flavors and freeze dried fruits to bring your favorite flavors to oats.

Think:

Apple juice + coconut water + freeze dried berries.

Pineapple juice + coconut water + freeze dried pineapple.

FINALLY…

If you want a protein boost, you could use this Protein Oats mix with the liquid proportions mentioned above.

Or you could add in about 1/2 a scoop of this protein powder to each jar, using the recipe below.

All that to say, these are easy to “make your own” and are the perfect “cool summer breakfast.”

Prep Time10 minutes minutes
Cook Time0 minutes minutes
Total Time2 hours hours
Servings - 8 servings

Equipment

  • 8 4 oz. glass jelly jars or similar containers

Ingredients

  • 2 cups rolled oats
  • 1 bag freeze dried mango, crushed or chopped dried mango
  • 1 cup coconut water
  • 1 cup mango nectar

Instructions

  • To each of the 4 oz. glass jars, add 1/4 cup rolled oats.
  • Crush the freeze dried mango and add a few pinchfuls onto the oats.
  • In a liquid measuring cup, combine the coconut water and mango nectar, stir gently.
  • Pour the liquid into each of the jars, covering the oats and mango. Leave a little space on the top for the oats to expand. If needed, make another 1/2 to 1 cup of the same even amounts of coconut water and mango nectar to fill all of the jars.
  • Give each jar a slight stir with a spoon or knife to make sure all of the oats and mango are "underwater."
  • Put the lids on the jars and place in the refrigerator overnight, or for at least 2 hours before eating. Refrigerate up to 5 days.
  • Served chilled for breakfast or snack.
