Antipasto Pasta Salad
A bold and delicious antipasto pasta salad filled with Italian meats, cheeses, veggies, and pasta—ideal for gatherings or meal prep.
Servings - 8 servings
Ingredients
- 16 oz. small shell pasta regular or gluten free
- 2 cups chopped salami
- 2 cups grape tomatoes halved
- 8 oz. mozzarella pearls
- 1 cup sliced green olives
- 10 small basil leaves chiffonade into ribbons
- 5 oz. vinaigrette salad dressing or slightly more or less to taste
Instructions
- Cook the pasta as directed. Drain well and rinse with cold water.
- While the pasta is cooking, prepare the ingredients to be added to the pasta salad.
- Add the drained and rinsed pasta to a large serving bowl, then add the chopped salami, halved grape tomatoes, mozzarella pearls, green olives and basil ribbons. Gently toss and combine.
- Add the vinaigrette salad dressing, drizzled over the top. Gently toss and combine and add more dressing if you like.
