We adore the tangy, flavorful shredded Mississippi Beef so much!

It’s so easy and so scrumptious!
We normally enjoy this shredded beef with some baby potatoes and veggies.
Recently, I decided to have aAlittle fun with the shredded beef and turn it into quesadillas with some English cheddar.
I wanted a cheese that was sharp and had some pungent to it…and it worked perfectly with the tangy, Ranch laden beef.
You could use a mozzarella or cheddar, if that’s what you have on hand. But I highly recommend something a little on the sharper side. 🙂

Mississippi Beef Quesadillas
Ingredients
- 3 cups shredded Mississippi Beef Roast recipe below
- 6 regular tortillas
- 2 cups shredded sharp English cheddar cheese or other cheddar cheese
- veggies or salad side dish
Instructions
- Slow cook the Mississippi Beef as directed and then shred when finished cooking.
- Preheat the oven to 400 F.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Place the tortillas onto the baking sheet. To 1/2 of the tortilla, add a pinch of cheese, the a forkful of shredded beef, then another pinch of cheese. Fold the tortilla and press flat. Repeat until all of the quesadillas are made.
- Bake in the preheated oven for 10 minutes. Then carefully remove the tray, flip over all of the quesadillas and bake for another 5 to 10 minutes.
- Let cool slightly before cutting the quesadillas into wedges with a knife or pizza wheel.
- Serve Mississippi Beef Quesadillas with veggies or side salad. Enjoy!
