It’s Your Favorite Shredded Beef in Quesadilla Form! You Will Adore These Mississippi Beef Quesadillas!

We adore the tangy, flavorful shredded Mississippi Beef so much! 

It’s one of the most downloaded recipes in the MyFreezEasy web app, and it’s featured in the MyFreezEasy FREE TRIAL for a reason. 

It’s so easy and so scrumptious! 

We normally enjoy this shredded beef with some baby potatoes and veggies. 

Recently, I decided to have aAlittle fun with the shredded beef and turn it into quesadillas with some English cheddar. 

I wanted a cheese that was sharp and had some pungent to it…and it worked perfectly with the tangy, Ranch laden beef. 

You could use a mozzarella or cheddar, if that’s what you have on hand. But I highly recommend something a little on the sharper side. 🙂

Mississippi Beef Quesadillas

A fun and delicious twist on the classic shredded Mississippi Beef roast - add some shredded beef into a tortilla with some sharp cheddar!
Prep Time10 minutes minutes
Cook Time15 minutes minutes
Servings - 4 servings

Ingredients 

  • 3 cups shredded Mississippi Beef Roast recipe below
  • 6 regular tortillas
  • 2 cups shredded sharp English cheddar cheese or other cheddar cheese
  • veggies or salad side dish

Instructions

  • Slow cook the Mississippi Beef as directed and then shred when finished cooking.
  • Preheat the oven to 400 F.
  • Line a baking sheet with parchment paper or a silicone baking mat.
  • Place the tortillas onto the baking sheet. To 1/2 of the tortilla, add a pinch of cheese, the a forkful of shredded beef, then another pinch of cheese. Fold the tortilla and press flat. Repeat until all of the quesadillas are made.
  • Bake in the preheated oven for 10 minutes. Then carefully remove the tray, flip over all of the quesadillas and bake for another 5 to 10 minutes.
  • Let cool slightly before cutting the quesadillas into wedges with a knife or pizza wheel.
  • Serve Mississippi Beef Quesadillas with veggies or side salad. Enjoy!
