Slow cook the Mississippi Beef as directed and then shred when finished cooking.
Preheat the oven to 400 F.
Line a baking sheet with parchment paper or a silicone baking mat.
Place the tortillas onto the baking sheet. To 1/2 of the tortilla, add a pinch of cheese, the a forkful of shredded beef, then another pinch of cheese. Fold the tortilla and press flat. Repeat until all of the quesadillas are made.
Bake in the preheated oven for 10 minutes. Then carefully remove the tray, flip over all of the quesadillas and bake for another 5 to 10 minutes.
Let cool slightly before cutting the quesadillas into wedges with a knife or pizza wheel.
Serve Mississippi Beef Quesadillas with veggies or side salad. Enjoy!
