Hatch Chile Chicken Soup

Servings - 4 servings
Ingredients
- 1 lb. ground chicken
- 1 small white onion finely chopped
- 1 jar hatch chile green salsa or 7 oz. can green chiles
- 2 15 oz cans white beans drained
- 2 cups chicken stock
- salt and pepper to taste
- avocado slices, sour cream optional garnish
- fresh veggies or side salad side dish
Instructions
- In a large stockpot or Dutch oven, brown the ground chicken with the chopped onion.
- Once browned, add in the green chile salsa or green chiles, then the white beans, then the chicken stock. Stir and bring to bubbling. Let cook for 15 to 20 minutes. Season with salt and pepper to taste.
- Serve the Hatch Chile Chicken Soup with sour cream and avocado slices, with side of fresh veggies or salad.
