Ingredients
1lb.ground chicken
1smallwhite onionfinely chopped
1jarhatch chile green salsaor 7 oz. can green chiles
215 ozcans white beansdrained
2cupschicken stock
salt and pepper to taste
avocado slices, sour creamoptional garnish
fresh veggies or side saladside dish
Instructions
In a large stockpot or Dutch oven, brown the ground chicken with the chopped onion.
Once browned, add in the green chile salsa or green chiles, then the white beans, then the chicken stock. Stir and bring to bubbling. Let cook for 15 to 20 minutes. Season with salt and pepper to taste.
Serve the Hatch Chile Chicken Soup with sour cream and avocado slices, with side of fresh veggies or salad.
