Greek Protein Bowls
These Greek-inspired bowls combine creamy cottage cheese, hearty chickpeas, and crisp vegetables for a satisfying lunch or dinner that comes together in minutes.
Servings - 4 servings
Ingredients
- 8 oz. 4% cottage cheese
- 15 oz. can chickpeas drained and rinsed
- 2 medium cucumbers chopped
- 1 pint grape or cherrry tomatoes halved
- 2 Tbsp Greek vinaigrette dressing in each bowl
Instructions
- Set out 4 make-ahead meal containers and divide up the cottage cheese into each bowl.
- Divide the rinsed chickpeas evenly into each bowl. Add the chopped cucumbers and halved tomatoes, evenly divided into each bowl.
- Add a lid and store in the fridge. I recommend adding the dressing at the time you mix it all together and eat it.
