8oz.4% cottage cheese
15oz.can chickpeasdrained and rinsed
2mediumcucumberschopped
1pintgrape or cherrry tomatoeshalved
2TbspGreek vinaigrette dressingin each bowl
Instructions
Set out 4 make-ahead meal containers and divide up the cottage cheese into each bowl.
Divide the rinsed chickpeas evenly into each bowl. Add the chopped cucumbers and halved tomatoes, evenly divided into each bowl.
Add a lid and store in the fridge. I recommend adding the dressing at the time you mix it all together and eat it.
