Greek Protein Bowls

These Greek-inspired bowls combine creamy cottage cheese, hearty chickpeas, and crisp vegetables for a satisfying lunch or dinner that comes together in minutes.

Ingredients 

  • 8 oz. 4% cottage cheese
  • 15 oz. can chickpeas drained and rinsed
  • 2 medium cucumbers chopped
  • 1 pint grape or cherrry tomatoes halved
  • 2 Tbsp Greek vinaigrette dressing in each bowl

Instructions

  • Set out 4 make-ahead meal containers and divide up the cottage cheese into each bowl.
  • Divide the rinsed chickpeas evenly into each bowl. Add the chopped cucumbers and halved tomatoes, evenly divided into each bowl.
  • Add a lid and store in the fridge. I recommend adding the dressing at the time you mix it all together and eat it.
  • Store up to 5 days in the fridge. Enjoy these make-ahead Greek Protein bowls for a quick grab and go lunch or dinner.
