Chickpea Stew

 Chickpea StewIngredients
1 cup rice, uncooked ($.20)
1 15 oz can chickpeas, drained and rinsed ($.79) Rice + Chickpeas = Complete Protein
1 15 oz. can diced tomatoes ($.23) Load Hunts $1 off 5 “ecoupon” here!
1 box chopped spinach ($.25) Sale + paper coupon + “ecoupon”
1 zucchini, diced ($.09) Remember this?!?
1/2 onion, diced ($.20)
2 cloves garlic ($.10)
2 T EVOO (extra virgin olive oil) ($.20)
Pulled pork, leftovers
2 pieces of sliced Italian Loaf ($.25)**
GF Apple Muffins ($.25)

**I’ve got a few slices left from before we were Gluten Free, so I’m trying to get rid of it!

Directions
1. Load all ingredients except the rice into the crockpot. Cook on high for 4 hours. Love the smell of stew brewing all day as the flavors mix and mingle!
2. Boil 2 1/4 cups water. Add rice, stir, bring to boil. Cover and reduce heat/simmer 15-20 minutes.
3. Serve chickpea stew over rice. And a slice of your favorite bread on the side!
4. I will serve leftover pulled pork to the boys, as I don’t think they’ll go for the chickpeas. We’ll see!

Could you throw the rice in too, or would it soak up all the liquid?

Did you actually put the bread and muffins in the crockpot too? Or are those served with the meal?

Breezy- Yes, you could certainly add some rice into the crockpot. The stew was not very “liqudy” so you’d have to add some water.

Bread and muffins on the side. I did sop up some juices with the bread.

Oh my goodness… I can’t believe I never thought to put this in the CROCKPOT!!! That’s what happens when you put frugal heads together :)
