Ultimate Comfort Food MASHUP: Classic Shepherd’s Pie Ingredients with a TexMex Nachos Twist

Shepherd’s Pie Nachos combine the hearty flavors of a classic shepherd’s pie with the crispy crunch of tortilla chips, creating the ultimate comfort food mashup.

Topped with savory ground beef and corn, melted cheese, a dollop mashed potatoes, and a touch of sour cream – these nachos are perfect for sharing!

Shepherd's Pie Nachos

Ultimate Comfort Food MASHUP: Classic Shepherd’s Pie Ingredients with a TexMex Nachos Twist

Servings - 4 servings

Ingredients 

  • 1 lb. ground beef
  • 1 Tbsp minced onion
  • 1 tsp garlic powder
  • 15 oz. can corn
  • 1 medium red bell pepper seeded and chopped
  • 1/2 cup ketchup
  • 1/2 cup beef broth or water
  • 1 bag tortilla chips
  • 1 cup shredded cheddar or pepper jack cheese
  • 2 cups prepared instant mashed potatoes garnished as dollops
  • sour cream dollops garnish

Instructions

  • In a large skillet, brown the ground beef with the minced onion and garlic. Drain if needed.
  • Stir in the corn and chopped red bell pepper and saute for 2 to 3 minutes. Stir in the ketchup and broth/water and combine together. Let simmer another 2 to 3 minutes.
  • Set chips out onto individual plates and then top with the meat and veggie mixture. Cover the meat with shredded cheese and let it melt, or microwave it for 40 seconds to melt the cheese.
  • Top the nachos with dollops of prepared mashed potatoes - leftovers or instant for convenience. Add a few dollops of sour cream too.
  • Serve Shepherd's Pie Nachos as is, or with side salad or veggies. Enjoy!
