This sheet pan salmon and veggies recipe is a quick and healthy meal, perfect for busy weeknights.

Fresh salmon fillets are seasoned with a simple lemon, salt and pepper, that are roasted alongside a colorful mix of vegetables for a flavorful, one-pan dish.

With minimal prep and easy cleanup, it’s a nutritious and delicious option the whole family will love!

Sheet Pan Salmon and Veggies

This sheet pan salmon and veggies recipe is a quick and healthy meal, perfect for busy weeknights.
Prep Time5 minutes minutes
Cook Time25 minutes minutes
Servings - 4 servings

Ingredients 

  • 4 4 oz. salmon fillets
  • lemon juice drizzles
  • salt and pepper
  • 1 lb. bag baby carrots
  • 1 lb. asparagus spears ends snapped off
  • olive oil drizzles
  • seasoning salt dusting

Instructions

  • Preheat oven to 400 F. Line a rimmed baking sheet with parchment paper or silicone baking mat.
  • Place the salmon fillets onto the prepared baking sheet. Add a few drizzles of lemon juice to each fillet and sprinkle with salt and pepper.
  • Add the baby carrots and asparagus spears in a single layer around the salmon.
  • Drizzle olive oil over the asparagus and baby carrots and then add a dusting of seasoning salt to the veggies.
  • Roast in the preheated oven for 20 to 25 minutes, or until salmon is cooked through and veggies are fork tender.
  • Serve Sheet Pan Salmon and veggies, as is, or with side salad. Enjoy!
