Mini Easter Egg Chocolate Chip Cookie Bars

Toss in some mini cadbury eggs to a delicious cookie bar recipe!
Prep Time10 minutes minutes
Cook Time35 minutes minutes
Servings - 9 cookie bars

Ingredients 

  • 1/2 cup butter melted
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup white flour or 1:1 gluten-free flour blend
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips
  • 1 cup mini Cadbury easter egg chocolates

Instructions

  • Preheat the oven to 325 F. Line a square baking pan with parchment paper.
  • In a mixing bowl, melt the butter and then stir in both sugars, the vanilla and the egg. Stir in the flour, baking soda, and salt. Fold in the mini chocolate chips and mini Cadbury chocolate eggs.
  • Pour the batter into the parchment paper lined baking dish and spread into an even layer. Bake in the preheated oven for 30 to 35 minutes or until middle has set.
  • Let the cookie bars cool before slicing and serving. Enjoy!
