Jalapeño Popper Chicken Salad: All Your Favorite Flavors in One Bold Bowl

If you love the creamy, spicy kick of jalapeño poppers, you’re going to be obsessed with this chicken salad that captures all those crave-able flavors in a fresh, protein-packed dish.

Tender chicken gets tossed with cream cheese, yogurt, crispy bacon, diced jalapeños, and shredded cheddar for a salad that’s anything but boring.

Perfect for meal prep, quick lunches, or stuffed into wraps and sandwiches, this recipe transforms a classic appetizer into an exciting main course you’ll want to make on repeat.

Jalapeño Popper Chicken Salad

All the flavors of Jalapeno Poppers popping in this tender chicken salad!

Cook Time10 minutes minutes
Chilling Time4 hours hours
Servings - 8 servings

Ingredients 

  • 12 chicken tenderloins
  • 1 tsp vinegar
  • 1/2 cup whipped cream cheese
  • 1/2 cup plain Greek yogurt or mayo
  • 1 small jalapeño seeded and finely chopped
  • 1 cup shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 1 tsp Ranch dressing mix
  • salt and pepper to taste

Instructions

  • In a large saucepan or stockpot, boil water and add the chicken tenderloins and splash of vinegar. Boil for 10 minutes.
  • Using tongs, transfer the cooked tenderloins to a bowl and shred with a fork.
  • Add the whipped cream cheese and Greek yogurt and mix together with the shredded chicken.
  • Add the chopped jalapeño, shredded cheddar, and crumbled bacon bits. Stir to combine. Add the Ranch dressing mix and salt/pepper to taste.
  • Chill and serve Jalapeño Popper Chicken Salad on toast, crackers, or sandwich.
