Honey Ginger Pulled Pork
This flavorful dinner combines tender slow-cooked pork with the sweetness of honey and the zing of ginger. It's perfect for sandwiches, tacos, or served with rice and vegetables for a delicious and comforting meal. Enjoy!
Servings - 4 servings
Ingredients
- 2 lb. pork roast
- Salt and pepper
- 1/2 cup honey
- 1/4 cup chicken stock
- 1/4 cup soy sauce
- 2 tsp ground ginger
- Garnish: sliced green onions
- Side: rice
- Side: salad
Instructions
- Place the pork roast into the base of the slow cooker and season with salt and pepper.
- In a small mixing bowl, whisk together the honey, chicken stock, soy sauce and ground ginger. Pour over the top of the pork roast in the slow cooker.
- Set the slow cooker on low and cook for 8 hours. Once finished cooking, shred the pork with 2 forks and mix into the sauce. Strain before adding the pork to serving plates.
- Cook the rice, as directed.
- Prepare the salad.
- Serve Honey Pulled Pork with green onion garnish, side of rice and salad.
Freezer Meal Instructions
- To a gallon-size plastic freezer baggie, add the pork roast, prepared sauce and salt and pepper.
- Remove as much air as possible and seal. Add label to baggie and freeze.
- Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.
