Honey Ginger Pulled Pork

This flavorful dinner combines tender slow-cooked pork with the sweetness of honey and the zing of ginger. It's perfect for sandwiches, tacos, or served with rice and vegetables for a delicious and comforting meal. Enjoy!

Ingredients 

  • 2 lb. pork roast
  • Salt and pepper
  • 1/2 cup honey
  • 1/4 cup chicken stock
  • 1/4 cup soy sauce
  • 2 tsp ground ginger
  • Garnish: sliced green onions
  • Side: rice
  • Side: salad

Instructions

  • Place the pork roast into the base of the slow cooker and season with salt and pepper.
  • In a small mixing bowl, whisk together the honey, chicken stock, soy sauce and ground ginger. Pour over the top of the pork roast in the slow cooker.
  • Set the slow cooker on low and cook for 8 hours. Once finished cooking, shred the pork with 2 forks and mix into the sauce. Strain before adding the pork to serving plates.
  • Cook the rice, as directed.
  • Prepare the salad.
  • Serve Honey Pulled Pork with green onion garnish, side of rice and salad.

Freezer Meal Instructions

  • To a gallon-size plastic freezer baggie, add the pork roast, prepared sauce and salt and pepper.
  • Remove as much air as possible and seal. Add label to baggie and freeze.
  • Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw in the fridge overnight, or a warm bowl of water for about 20 minutes, before transferring to the slow cooker and cooking on low for 8 hours.
