Ground Beef & Rice "Dump Casserole"

Love these easy "dump and bake" kind of recipes - this one is hearty, full of flavor that everyone will love!
Prep Time5 minutes minutes
Cook Time1 hour hour 15 minutes minutes
Servings - 8 servings

Ingredients

  • 1 lb. lean ground beef browned
  • 1 1/2 cup white rice
  • 15 oz. can diced tomatoes undrained
  • 15 oz. can tomato sauce
  • 1 Tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp minced garlic
  • 1 1/2 cup beef broth
  • salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded cheddar or mozzarella cheese
  • fresh veggies or side salad side dish

Instructions

  • Preheat oven to 350 F. Set out a 9x13-inch baking dish.
  • If needed, brown the ground beef and drain. (I used some that I had pre-browned and frozen during a bulk ground beef cooking session.)
  • Add the rice, ground beef, can of diced tomatoes, can of tomato sauce, Worcestershire sauce, Italian seasoning and minced garlic. Pour the beef broth into the baking dish and gently stir to combine and to remove all the bubbles.
  • Cover tightly with foil and bake for 60 minutes. Remove foil and then sprinkle the grated Parmesan and the shredded cheese over the top. Return to the oven for 15 minutes, or until cheese has melted. Season with salt and pepper to taste.
  • Serve Ground Beef & Rice Dump Casserole with favorite veggies or side salad. Enjoy!
