The boys devour them.
They love the crunchy mess.
They love the flavors.
They love to see how full they can make them.
I love the concept of making tacos in the oven, and melting the cheese over the top of the meat. Then piling on the toppings.
Freezer Friendly Chicken Oven Tacos
I love the concept of making tacos in the oven, and melting the cheese over the top of the meat. Then piling on the toppings.
Servings - 4 servings
Ingredients
- 3 cups shredded chicken
- 1 cup red salsa
- 1 packet taco seasoning
- 12 hard taco shells
- 1 cup shredded Mexican blend cheese
- Garnish: sour cream
- Garnish: guacamole
- Side: fruit
Instructions
- Preheat oven to 400 F.
- In a large mixing bowl, toss the chicken with the red salsa taco seasoning and coat it well.
- Place the hard shell tacos into the base of a 7×11 or 9×9-inch baking dish. Add the chicken-salsa mixture into each taco shell, and then add a few pinches of shredded cheese onto each taco.
- Bake in the preheated oven for 10 to 15 minutes, or until cheese has melted in the tacos..
- Prepare the fruit.
- Top with dollops of sour cream, guacamole or other favorite taco toppings.
- Serve Chicken Oven Tacos with side of fruit.
Freezer Meal Assembly Instructions
- To a gallon size freezer bag, add the: cooked shredded chicken, red salsa, and taco seasoning.
- Remove as much air as possible, seal, and label.
- Put in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer.
Freezer Meal Thaw & Cook Instructions
- Thaw in the fridge overnight, or a warm shallow dish of water for about 20 minutes, before transferring to the skillet to reheat the chicken and salsa combo.
- Assemble tacos with shredded cheese and bake at 400 F for 10 - 15 minutes.
- Top with garnishes. Serve with fruit.
