I love the concept of making tacos in the oven, and melting the cheese over the top of the meat. Then piling on the toppings.

Ingredients
3cupsshredded chicken
1cupred salsa
1packet taco seasoning
12hard taco shells
1cupshredded Mexican blend cheese
Garnish: sour cream
Garnish: guacamole
Side: fruit
Instructions
Preheat oven to 400 F.
In a large mixing bowl, toss the chicken with the red salsa taco seasoning and coat it well.
Place the hard shell tacos into the base of a 7×11 or 9×9-inch baking dish. Add the chicken-salsa mixture into each taco shell, and then add a few pinches of shredded cheese onto each taco.
Bake in the preheated oven for 10 to 15 minutes, or until cheese has melted in the tacos..
Prepare the fruit.
Top with dollops of sour cream, guacamole or other favorite taco toppings.
Serve Chicken Oven Tacos with side of fruit.
Freezer Meal Assembly Instructions
To a gallon size freezer bag, add the: cooked shredded chicken, red salsa, and taco seasoning.
Remove as much air as possible, seal, and label.
Put in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer.
Freezer Meal Thaw & Cook Instructions
Thaw in the fridge overnight, or a warm shallow dish of water for about 20 minutes, before transferring to the skillet to reheat the chicken and salsa combo.
Assemble tacos with shredded cheese and bake at 400 F for 10 - 15 minutes.
