Beef Skillet with Sweet Potatoes and Zucchini
This budget-friendly skillet dinner with ground beef, sweet potatoes and zucchini is a one-dan dinner that will save your grocery cash!
Servings - 4 servings
Ingredients
- 1 lb. ground beef
- 1 Tbsp minced garlic
- 1 Tbsp seasoning salt
- 3 small zucchini
- 3 medium sweet potatoes peeled and cubed
- grated Parmesan cheese garnish
Instructions
- In a large skillet, brown the ground beef and drain, if needed.
- While the beef is browning, cut the zucchini into bite-size pieces. Peel and cut the sweet potatoes into bite-size pieces.
- In order to quickly cook the sweet potatoes in the skillet, it helps to microwave them to soften them before sauteing. Place the sweet potato cubes into a microwave safe (glass) bowl and microwave for 4 minutes.
- Once the beef has browned, stir in the minced garlic, seasoning salt, zucchini pieces, and softened sweet potatoes pieces. Toss to combine.
- Add 1/2 cup of water and cover with a lid and cook over medium heat for 10 minutes, or until sweet potatoes are fork tender. If needed, add more water and continue to cook until sweet potatoes are ready.
- Serve Beef Skillet with Sweet Potatoes and Zucchini with a dusting of Parmesan cheese.
