In a large skillet, brown the ground beef and drain, if needed.
While the beef is browning, cut the zucchini into bite-size pieces. Peel and cut the sweet potatoes into bite-size pieces.
In order to quickly cook the sweet potatoes in the skillet, it helps to microwave them to soften them before sauteing. Place the sweet potato cubes into a microwave safe (glass) bowl and microwave for 4 minutes.
Once the beef has browned, stir in the minced garlic, seasoning salt, zucchini pieces, and softened sweet potatoes pieces. Toss to combine.
Add 1/2 cup of water and cover with a lid and cook over medium heat for 10 minutes, or until sweet potatoes are fork tender. If needed, add more water and continue to cook until sweet potatoes are ready.
Serve Beef Skillet with Sweet Potatoes and Zucchini with a dusting of Parmesan cheese.
