Bright & Creamy Blueberry Lemon Cheesecake Bars That Taste Like Summer in Every Bite

If you’re craving a dessert that’s equal parts fresh, fruity, and indulgent, these Blueberry Lemon Cheesecake Bars are the answer.

With a buttery LEMON OREOS crust, a creamy cheesecake layer, and bursts of juicy blueberries, every bite is a perfect balance of tart and sweet.

These are so easy to make…even the homemade lemon Oreo crust.

No-Bake Blueberry Lemon Cheesecake Bars

These Blueberry Lemon Cheesecake Bars feature a lemony Oreo crust topped with a tangy cheesecake layer and then sweet blueberry layer.
Prep Time15 minutes minutes
Chilling Time4 hours hours
Servings - 16 bars

Ingredients 

  • 16 lemon Oreos
  • butter melted
  • 2 cups cheesecake filling
  • 1 can blueberry pie filling

Instructions

  • Separate the lemon Oreos, setting the lemon creme middles onto a plate.
  • Blend the lemon cookies until powdery, to use to make the crust. Mix the powdered lemon cookies with the melted butter.
  • Press the crust into an even layer in a 8x8 glass baking dish. Add the lemon creme slices onto the crust.
  • Add the cheesecake filling onto the lemon creme slices and smooth out into an even layer.
  • Add the blueberry pie filling onto the cheesecake layer and smooth out into an even layer. Place in the fridge to chill for at least 4 hours.
  • Slice the bars and serve. Enjoy!
