    Slow Cooker Beef Roast with Mushrooms

    You want your house to smell like a gourmet restaurant…make this!

    There’s something about the way the beef and mushrooms cook together…mmmmmmmmm…

    This is a fantastically delicious recipe for beef roast that has just a few ingredients and can be made with quite a few modifications, like:

    • Use minced onion instead of real onions.
    • Add the carrots in right before you cook it and not into the freezer pack. I have heard from some that baby carrots don’t do well after freezing and then slow cooking. {We have not had that problem…so not sure if it’s a slow cooker cooking issue, or a baby carrot brand issue. Or what.} Nonetheless, you can leave the carrots out of the bag and add them into the slow cooker when you make them. Entirely up to you!
    • Gluten Free modifications: Add quartered potatoes in before you cook it (not into the freezer pack!)
    • Whole 30 or Paleo modifications: Serve with mashed sweet potatoes in place of the dinner rolls.
    • One Dish Dinner idea: Add quartered potatoes in before you cook it (not into the freezer pack!) and it’ll all cook in one dish for you!
    • Oh, and you can brown the roast in a skillet or saucepan before you add it to the slow cooker. I don’t usually do that because the slow cooker does a fantastic job of softening the meat 🙂

    However you make it, the beef and mushrooms are the star of this show!

    Serve with side of bread and other veggies or just the carrots!

    This is like a ‘build your own adventure’ recipe!

    Note: I’ve written the recipe below to be based on the shopping list for the 6th plan in the 20 Meals from Costco for $150 series.

    Slow Cooker Beef Roast with Mushrooms & Carrots

    Prep Time10 minutes
    Cook Time8 hours
    Servings - 4 servings

    Ingredients 

    • 2-3 lbs. beef chuck roast
    • Salt and pepper
    • 1 tsp garlic powder
    • 1 cup chopped onion
    • 1 cup sliced white mushrooms
    • 1 lb. baby carrots or peeled carrot sticks
    • dinner rolls and veggies side dishes

    Instructions

    • Add the beef roast to the base of the slow cooker. Season with salt, pepper and garlic powder. Add the onions , mushrooms and carrots around and on top of the roast. Toss in a little more salt and pepper over the veggies.
    • Set slow cooker on low and cook for 8 hours, or high for 6 hours. If cooking from partially frozen, you'll need to cook on low for 8 to 10 hours, depending on how frozen the pack is when you start cooking it.
    • To pack into gallon size freezer baggie: Label. Then, follow the same directions in the first 2 bullets. Remove as much air as you can and seal. Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer.
    • Tothaw, place the bags in the fridge overnight. Or quick thaw in a bowl of warm water.
