Bacon and Egg Quesadillas

Bacon and Egg Quesadillas

Quesadillas for breakfast!
Prep Time5 minutes minutes
Cook Time25 minutes minutes
Servings - 4 servings

Ingredients 

  • 6 strips of bacon
  • 8 eggs
  • 1 cup shredded cheese
  • 8 Tortillas use natural corn tortillas for gluten free
  • Salsa
  • 2 Pears

Instructions

  • Cook bacon in skillet on stove top. (Or cook it in the oven!) Remove and place on paper towel to drain excess fats. Pour most of the fat from the skillet.
  • Scramble eggs in skillet that you cooked the bacon in. This way you don't need to add salt, as it's already in the bacon. Might not be the healthiest, but its certainly the tastiest!
  • Place tortilla on cookie sheet, top with scrambled eggs, bacon strips and sprinkle cheese on top. Place another tortilla on top.
  • Bake at 300 for 10 minutes, until cheese melts and tortillas are slightly crispy. Remove and slice quesadillas into quarters.
  • Serve with salsa and sliced pears or other fresh fruit!

    The only thing missing from this site is the nutritional information for each meal. Being a member of MyFitnessPal.com I like to keep track of my calories.

      Danielle Caloriecount.com has a program you can run your ingredients and number of servings through and it will give you a nutrient breakdown for free.

    Danielle, I think you could use egg beaters or egg whites, which is cheaper and low fat cheese. I am a past Weight Watcher and bacon I believe has one point per slice. Not bad. The corn tortillas are the lowest I believe. Hope this helps.

    I think I would add some green pepper and onion to the eggs and bacon since some of my family don’t like salsa… it would give the dish a little extra flavor.

    we made these tonight, but i was worried about the bacon pieces getting a bit too hard — so we used sausage instead — it was awesome and got all thumbs up!

    I love these. I use to go to a yuppy restaurant and purchase this for a few dollars. They would put a little dollap of sour cream in the middle. Oh so good. Use to share with my late mother in law. Great memories. Thanks for sharing

    Rockin’ idea! I like to cook bacon in the oven. It keeps the strips flat, gets them crispy, and it’s easy to clean up.
