    It’s the time of year when jams and jellies are in abundance at farmers markets and roadside stands. Or you can make you own jam like Erin does! She used blueberries & strawberries in her recipe, but it would work the same with blackberries!  When you stock up on jams, go ahead and grab some berries to make this delicious and easy blackberry quick bread!

    Angie's Blackberry Quick Bread

    Prep Time10 minutes
    Cook Time45 minutes
    Servings - 1 persons

    Ingredients 

    • 1 1/2 cups flour
    • 1 tsp baking powder
    • 2 eggs
    • 1/4 cup oil
    • 1 1/2 cups blackberry jam

    Instructions

    • 1 1/2 cups flour
    • 1 tsp baking powder
    • 2 eggs
    • 1/4 cup oil
    • 1 1/2 cups blackberry jam
    • Preheat oven to 350 degrees and spray your loaf pan.
    • Mix all ingredients together in a bowl.
    • Pour into greased loaf pan & bake for 40-45 minutes.
    • Enjoy!

      This is in the oven right now! What a quick, easy recipe. My three-year-old son enjoyed helping (I measured, he dumped!) I used a mixture of cherry, black raspberry, and strawberry preserves because I was cleaning out the fridge. 🙂 Thanks for sharing!

      Angie could you use self rising flour and just add other ingredients?

      Gayle, I believe if you use self rising flour you can omit the baking powder. Let me know how it turns out! Even easier!
