It’s the time of year when jams and jellies are in abundance at farmers markets and roadside stands. Or you can make you own jam like Erin does! She used blueberries & strawberries in her recipe, but it would work the same with blackberries! When you stock up on jams, go ahead and grab some berries to make this delicious and easy blackberry quick bread!
- 1 1/2 cups flour
- 1 tsp baking powder
- 2 eggs
- 1/4 cup oil
- 1 1/2 cups blackberry jam
- Preheat oven to 350 degrees and spray your loaf pan.
- Mix all ingredients together in a bowl.
- Pour into greased loaf pan & bake for 40-45 minutes.
